Mini Quiche Muffins For Your Next Party: No Eggs Required!!

Sometimes when we are plant based, it’s rather difficult to come up with something that others will actually eat that satisfies their taste buds.

Many people don’t follow a healthy diet because they believe food can’t taste good! Well, guess what? It can!

Quiche with no eggs, just garbanzo bean flour. Can you imagine?

This is so simple to make! It’s always good to have easy recipes on hand especially if your time is limited!

Recipe for Chick Pea Mini Muffins

Blend Time:
3 or 4 minutes
Cooking Time: 15 minutes

Mini Muffin Tin (Pre-greased)
2 Cups Chick Pea (Garbanzo Bean) Flour
2 3/4 Cups Water
1 Tbsp Olive Oil
1 Tbsp Iodized Sea Salt
6 Heaped Tablespoons of Salsa (or more if you’d like)

1. Preheat oven to 450 degrees
2. Mix the flour, water, olive oil and salt until all the lumps and bumps are out
3. Add Salsa to mixture and stir until it’s all blended together
4. With a ladle, spread mixture into mini muffin tin
5. Bake for 15 minutes
6. Let cool and ENJOY!!

I love the Garbanzo bean flour because it’s my replacement for eggs. I couldn’t believe I could make quiche muffins using flour instead of eggs.
